It is aged for at least twenty-five years in the best centuries-old barrels of the Giusti family, to be then withdrawn only once a year, when its maturation is complete.

Traditional Balsamic Vinegar of Modena is the yield of the typical grape varieties grown in Modena, together with the art of cooking musts and the dedication to the annual procedure of transferring the vinegar between barrels. After the crushing of the grapes and even before he started the fermentation process, the must is cooked in an uncovered boiler, until a concentration of 30-70% is achieved.
