What makes this wine special is that its sparkling nature is produced through fermentation in the bottle of the sugars found in the grapes without added sugar and therefore can be bottled only during the harvest or immediately after. In addition to the quality of the grapes, the superior result is determined by the passage of time from bottling to disgorgement and from disgorgement to consumption which could be from a few months to many years.
